Church Pot Luck Casserole

Need a quick and easy for a potlock? Or how about it's cold outside, and you need some gold, old-fashioned comfort food to stick to your ribs? This casserole will keep 'em coming!


  • 2 Boxes Macaroni and Cheese
  • 1-1/2 Teaspoons Oil
  • 1 Large Onion, Diced
  • 3 Medium Mushrooms, Sliced
  • 1 Pound Lean Ground Beef
  • 1 Can (10.5 oz.) Cream of Mushroom Soup
  • 1-2 Cups Grated Cheddar Cheese
Prepare macaroni and cheese according to box directions. Stir in cream of mushroom soup. In a skillet, heat oil on medium high. Add onion and mushrooms. Saute until onion is translucent but not browned. Add onion mixture to macaroni and cheese. Brown ground beef in skillet. Add to macaroni and cheese. Pour mixture into a casserole dish and sprinkle grated cheese on top. Bake uncovered at 325 degrees for 20-25 minutes. Variation: use a bread crumb topping instead of grated cheese
